If you have read the entire story, I am at a loss as to why you would think that Joseph might have lied to Pharaoh.  His family were indeed keepers of livestock, not "cattlemen" as you put it. They had flocks of sheep and herds of cattle. Joseph told the truth to Pharaoh. See Genesis 47:1 Joseph went and told Pharaoh, "My father and brothers, with their flocks and herds and everything they own, have come from the land of Canaan and are now in Goshen. "Cattlemen" do not shepherd flocks. Pharaoh would have been pleased that Joseph's family had been settled in Goshen because it was far from the main population centres. Joseph had no need to lie to Pharaoh and he did not.
